The first thing I’ll tell you to do is to have your husband see a doctor right after he eats.  Make an appointment, then go eat a big meal right before it.  Then when the doctor hears his heart skip a beat they may be able to provide you with some more information.

There is some evidence that suggests that some food chemicals can cause heart palpitations (which is an irregular beating of the heart including skipped beats).  MSG is the most common culprit, but there are other flavour enhancers that can cause heart palpitations as well. 

Other than revisiting your doctor, or getting a second and third opinion, I think you should monitor what your husband is eating.  You can even try to predict when the heart palpitations occur.  Although he may not like it, and you can just claim it’s a test, get him to eat only fresh vegetables and fruits for dinner one night and see if he has any heart palpitations.  Once you know for sure that not all foods cause the heart palpitations have your husband eat one type of food at a time until you can pin point what is causing the problem.  Even if you can’t pin point a specific ingredient, you may get a general idea of what foods he should and should not eat.  The worst you’ll do is eat better!
